Cheesy Spinach And Mushroom Manicotti

This is a nice twist on an old favorite by adding spinach and fresh mushrooms.

Ingredients

  • Mushrooms
  • Garlic Cloves
  • Spinach
  • Part-skim Ricotta Cheese
  • Part-skim Mozzarella Cheese
  • Provolone Cheese
  • Reduced-fat Cream Cheese
  • Parmesan Cheese
  • Egg
  • Manicotti
  • Spaghetti Sauce

Instructions

  1. Preheat oven to 350f spray a 9×13 pan with nonstick cooking spray
  2. Set aside
  3. Spray large nonstick skillet with cooking spray
  4. Add mushrooms and garlic
  5. Cook 5 minutes on medium heat, stirring frequently
  6. Remove from heat
  7. In a large bowl, mix thoroughly the mushroom mixture, spinach, ricotta cheese, provolone, cream cheese, half of parmesan cheese, and the eggs
  8. Spoon about 2 tbsp of filling mixture into the manicotti shells and then place them into the 9×13 pan
  9. Drizzle remaining sauce over top
  10. Top with remaining parmesan cheese and bake 55 minutes or until heated through
