Ingredients

  • Butter
  • Green Pepper
  • Onion
  • All-purpose Flour
  • Milk
  • Cheddar Cheese
  • Salt
  • Dry Mustard
  • Hot Sauce
  • Hominy
  • Ripe Olives
  • Soft Breadcrumbs

Instructions

  1. Melt the 3 tablespoons butter in a heavy saucepan over low heat
  2. Add the green pepper and onion
  3. Saute until tender
  4. Add the flour and cook 1 minute, stirring constantly
  5. Gradually add the milk
  6. Cook over medium heat, stirring constantly, until thickened and bubbly
  7. Add cheese, salt, mustard, and hot sauce
  8. Stir until cheese melts
  9. Stir in the hominy and olives
  10. Spoon mixture into a lightly greased 1-1 / 2 quart casserole
  11. Combine breadcrumbs and melted butter
  12. Sprinkle over hominy mixture
  13. Bake, uncovered, at 375f for 20 minutes or until mixture is bubbly
