Cashew Chicken Stir Fry

We really like stir-fries and this one is no exception. I like the combo of veggies with the chicken. The sauce is simple and basic asian flavors.

We really like stir-fries and this one is no exception. I like the combo of veggies with the chicken. The sauce is simple and basic asian flavors.

Ingredients

  • Chicken Broth
  • Cornstarch
  • Soy Sauce
  • Ground Ginger
  • Boneless Skinless Chicken Breast
  • Garlic Cloves
  • Carrot
  • Celery
  • Broccoli Florets
  • Fresh Snow Pea
  • Cashews
  • Cooked Rice

Instructions

  1. In a skillet, heat 3 t
  2. Chicken broth
  3. Meanwhile, combine the cornstarch, soy sauce, ginger and remaining broth until smooth
  4. Set aside
  5. Add chicken to the skillet
  6. Stir-fry over medium heat until no longer pink, about 3 – 5 minutes
  7. Remove and keep warm
  8. Add garlic, carrots and celery
  9. Stir fry for 3 minutes
  10. Add broccoli and peas
  11. Stir fry for 4-5 minutes or until crisp-tender
  12. Stir broth mixture
  13. Add to the skillet with chicken
  14. Cook and stir for 2 minutes
  15. Stir in cashews
  16. Serve over rice, if desired
