A healthy and light dish that tastes great. Get your veggie and fruit serving in and enjoy it. One serving (3/4 cup) equals 140 calories

Ingredients

  • Unsweetened Crushed Canned Pineapple
  • Tart Apples
  • Carrots
  • Raisins
  • Flaked Coconut
  • Sugar-free Non-fat Vanilla Yogurt
  • Plain Fat-free Yogurt
  • Reduced-fat Mayonnaise
  • Lemon Juice

Instructions

  1. Drain pineapple, reserving juice in a bowl
  2. Add apples to the juice
  3. Toss to coat
  4. Let stand for 5 minutes
  5. Drain
  6. In a large bowl, combine the pineapple, carrots, raisins, coconut and apples
  7. In a small bowl, combine the remaining ingredients
  8. Pour over carrot mixture and toss to coat
  9. Cover and refrigerate for 3-4 hours or until chilled
