This is a great way to use the surplus of oversized cucumbers. They are a great change that tastes nothing like a cucumber. No one will believe it when you say they are cucumbers rather your guests will think they ate great, crispy, red, hot, cinnamony apples. The oversized cucumbers are the best because they have thicker walls and hold good ringed shapes. Ingredients

  • Cucumbers
  • Pickling Lime
  • Vinegar
  • Red Food Coloring
  • Alum
  • Sugar
  • Cinnamon Sticks
  • Red Cinnamon Candies

Instructions

  1. Remember to use a non reactive cooking pot when doing this recipe
  2. The metal will react with the lime and turn everything black
  3. Combine cucumber rings, lime and 8 1 / 2 quarts of water in large container
  4. Let stand for 24 hours
  5. Drain, then rinse in clear water
  6. Cover with water
  7. Let stand 3 hours
  8. Then drain
  9. Place cucumbers in large kettle

  17. Bring syrup to a boil
  18. Pour over cucumbers
  19. Let stand for 24 hours
  20. Drain, reserving syrup
  21. Bring syrup to a boil
  22. Pour over cucumbers
  23. Let stand for 24 hours
  24. This is the last day of soaking
  25. After last day of soaking then heat syrup and cucumbers
  26. Pack into hot sterilized jars, covering cucumbers with syrup, leaving 1 / 2 inch head space
  27. Cover with sterilized lids and bands screwing bands tight
