Calico Yellow Zucchini Squash Casserole

Wonderful use for all my garden fresh squash and zucchini. Creamy, cheesy, and colorful.

Ingredients

  • Yellow Squash
  • Zucchini
  • Onion
  • Green Onion
  • Water
  • Salt
  • Butter Flavored Crackers
  • Butter
  • Cream Of Chicken Soup
  • Sliced Water Chestnuts
  • Carrot
  • Mayonnaise
  • Rubbed Sage
  • White Pepper
  • Cheddar Cheese

Instructions

  1. In a saucepan, combine the first 5 ingredients
  2. Add 1 / 2 teaspoon salt
  3. Cover and cook until squash is tender, about 6 minutes
  4. Drain well
  5. Set aside
  6. Combine cracker crumbs and butter
  7. Spoon half into a greased 1 1 / 2 quart casserole dish
  8. Combine soup, water chestnuts, carrot, mayonnaise, sage, pepper, and remaining salt
  9. Fold into squash mixture
  10. Spoon over crumbs
  11. Sprinkle with cheese and the remaining crumb mixture
  12. Bake, uncovered, at 350 degrees for 30 minutes or until lightly browned
