Braised Lettuce With Peas And Lemon

Ingredients

  • Olive Oil
  • Shallots
  • Boston Lettuce
  • Chicken Broth
  • Dried Thyme
  • Sugar
  • Frozen Peas
  • Lemon Zest
  • Salt & Freshly Ground Black Pepper

Instructions

  1. Heat the oil in a large skillet over moderate heat
  2. Saut the shallots until tender, about 5 minutes
  3. Add the lettuce, chicken broth
  4. Thyme, and sugar and simmer covered over low heat for about 5 minutes, until the lettuce is tender
  5. Add the peas and cook an additional 5 minutes
  6. Add the lemon zest, salt, and pepper, and serve immediately
