I got this recipe from one of my mom's cookbooks.

Ingredients

  • Olive Oil
  • Bacon
  • Onion
  • Celery
  • Carrot
  • Garlic
  • Fresh Thyme
  • Ground Beef
  • Ground Pork
  • Dry Red Wine
  • Bay Leaves
  • Beef Broth
  • Tomato Puree
  • Pappardelle Pasta
  • Parmesan Cheese

Instructions

  1. Heat oil in heavy large pot over medium high heat
  2. Add bacon
  3. Saut until beginning to brown, about 6 minutes
  4. Add onion, celery, carrot, garlic, and thyme
  5. Saut 5 minutes
  6. Add beef and pork
  7. Saut until brown and cooked through, breaking up meat with back of fork, about 10 minutes
  8. Add wine and bay leaves
  9. Simmer until liquid is slightly reduced, about 10 minutes
  10. Add broth and tomato puree
  11. Reduce heat to medium low
  12. Simmer until sauce thickens, stirring often, about 1 hour 15 minutes
  13. Season with salt and pepper
  14. Boil pasta in large pot of boiling salted water until just tender but still firm to bite, stirring often
  15. Drain
  16. Transfer to pot with sauce
  17. Toss
  18. Serve with parmesan
