Black Bean Tostadas With Garlicky Greens

Another great recipe from vegetarian times. These are delicious and so simple to make. Great for when you need a quick and healthy dinner.

Ingredients

  • Whole Wheat Tortillas
  • Vegetable Oil
  • Onion
  • Black Beans
  • Smoked Paprika
  • Dried Oregano
  • Garlic Cloves
  • Swiss Chard
  • Chipotle Salsa
  • Queso Fresco
  • Cilantro
  • Low-fat Sour Cream

Instructions

  1. Preheat oven to 425f spray both sides of tortillas with cooking spray
  2. Place on a baking sheet and toast 8-10 minutes, or until crisp
  3. Heat 1 tbs
  4. Oil in saucepan over medium heat
  5. Add onion, and cook 5 minutes or until soft
  6. Add beans, paprika, and oregano
  7. Reduce heat to medium-low and cook 10 minutes
  8. Heat remaining 1 tbs
  9. Oil in skilled over medium-low heat
  10. Add garlic, and cook 2 minutes, or until beginning to brown
  11. Stir in chard and season with salt & pepper, if desired
  12. Cover, and cook 4-5 minutes, or until chard is wilted
