Biscuit Mix Tempura Vegetables

Ingredients

  • Vegetable Oil
  • Biscuit Mix
  • Unsalted Butter
  • Egg Yolks
  • Beer
  • Fresh Ground Black Pepper
  • Egg Whites
  • Assorted Fresh Vegetables
  • Sea Salt

Instructions

  1. Preheat oven to 200f
  2. 16-cup saucepan or deep fryer
  3. Candy / deep-fry thermometer
  4. In a large saucepan over medium heat, heat about 4 inches of oil until thermometer registers 360f
  5. In a large bowl, blend biscuit mix, butter, egg yolks, beer and black pepper to make a smooth batter
  6. Set aside
  7. In a medium bowl, whisk egg whites until slightly froth
  8. Fold into the biscuit mix
  9. Let stand for about 10 minutes
  10. Dip vegetable pieces, one at a time, into the batter
  11. Place in hot oil, 4 at a time, and deep fry, turning once, until golden brown, 15 seconds per side
  12. Place on paper towels to absorb excess oil
  13. Transfer to an ovenproof platter and keep warm in preheated oven
  14. Make sure oil is the correct temperature before adding each batch
  15. Serve with a light sprinkling of sea salt
  16. Serves 8
  17. Variation: for spicy vegetables, add 1 teaspoons cayenne pepper to batter prior to frying
