Beef Fillets With Stilton Portabella Sauce

This is truly a special entree for a truly special occasion…serve with roasted potatoes and steamed haricots vert. Celebrate!

Ingredients

  • Beef Tenderloin Fillets
  • Fresh Tarragon
  • Fresh Ground Pepper
  • Butter
  • Portabella Mushroom Caps
  • Dry Red Wine
  • Sour Cream
  • Stilton Cheese

Instructions

  1. Rub the fillets with the chopped tarragon and pepper
  2. Melt 2 tbs of the butter in a large skillet over medium high heat
  3. Add the fillets and cook for 4 to 5 minutes on each side or to the desired degree of doneness
  4. Remove from the skillet and keep warm
  5. Melt the remaining 3 tbs butter in the skillet
  6. Add the mushrooms
  7. Saute for 3 to 4 minutes or until tender
  8. Add the wine
  9. Cook for 1 to 2 minutes, stirring to deglaze the skillet
  10. Stir in the sour cream
  11. Add 1 / 4 cup of the cheese
  12. Cook until melted, stirring constantly
  13. To serve, drizzle the sauce over the fillets
  14. Sprinkle with the remaining cheese
  15. Garnish with sprigs of tarragon
