Baked Pork Chops With Vegetable Rice

Very appealing looking and the bonus is that it tastes great. I got this recipe out of a magazine several years ago. The preparation time is merely guess work.

Ingredients

  • Vegetable Oil
  • Pork Chops
  • Onion
  • Garlic
  • Long Grain Rice
  • Curry Powder
  • Ground Cumin
  • Dried Oregano
  • Zucchini
  • Roma Tomatoes
  • Sweet Pepper
  • Salt
  • Pepper
  • Bay Leaf
  • Chicken Stock

Instructions

  1. In large skillet over medium-high heat, heat oil
  2. Brown chops on both sides
  3. Remove and set aside
  4. Add onion and garlic to skillet
  5. Cover and cook about 5 minutes, until softened
  6. Add rice, curry powder, cumin and oregano
  7. Stir to coat rice
  8. Add zucchini, tomatoes, peppers, salt, pepper, bay leaf and chicken stock
  9. Bring to boil
  10. Reduce heat, cover and simmer for 10 minutes
  11. Transfer mixture to 13 x 9 baking dish
  12. Nestle pork chops into rice
  13. Pour any juices from meat over top
  14. Cover and bake in 350 oven for 30 to 35 minutes or until rice is tender and liquid absorbed
  15. Discard bay leaf
