Ingredients

  • Olive Oil
  • Eggs
  • Plain Breadcrumbs
  • Parmesan Cheese
  • Dried Oregano
  • Dried Basil
  • Salt And Pepper
  • Eggplants
  • Tomato Sauce
  • Mozzarella Cheese

Instructions

  1. Preheat oven to 375 degrees
  2. Brush 2 baking sheets with oil
  3. Set aside
  4. In a wide, shallow bowl, whisk together eggs and 2 tablespoons water
  5. In another bowl, combine breadcrumbs, 3 / 4 cup parmesan, oregano, and basil
  6. Season with salt and pepper
  7. Dip eggplant slices in egg mixture, letting excess drip off, then dredge in breadcrumb mixture, coating well
  8. Place on baking sheets
  9. Bake until golden brown on bottom, 20 to 25 minutes
  10. Turn slices
  11. Continue baking until browned on other side, 20 to 25 minutes more
  12. Remove from oven
  13. Raise oven heat to 400 degrees
  14. Spread 2 cups sauce in a 9-by-13-inch baking dish
  15. Arrange half the eggplant in dish
  16. Cover with 2 cups sauce, then 1 / 2 cup mozzarella
  17. Repeat with remaining eggplant, sauce, and mozzarella
  18. Sprinkle with remaining 2 tablespoons parmesan
  19. Bake until sauce is bubbling and cheese is melted, 15 to 20 minutes
  20. Let stand 5 minutes before serving
