Ingredients

  • Refrigerated Pie Crust
  • Bacon
  • Mild Green Chilies
  • Green Onions
  • Monterey Jack Cheese
  • Sharp Cheddar Cheese
  • Eggs
  • Half-and-half
  • Salt

Instructions

  1. Preheat oven to 425 degrees f
  2. Unfold crust
  3. Using finger
  4. Press crust into a 9-inch diameter deep dish glass pie dish
  5. Press foil onto crust to hold shape
  6. Bake 5 minutes
  7. Remove from oven
  8. Remove foil
  9. Reduce oven temperature to 400 degrees
  10. Cook bacon in a heavy skillet over medium-high heat until brown and crisp
  11. Transfer to paper towels to drain
  12. Crumble bacon
  13. Sprinkle bacon, then chilies and green onions over crust
  14. Mix cheeses together and sprinkle over
  15. Whisk eggs, half and half, and salt in a medium bowl to blend
  16. Pour mixture into crust
  17. Bake quiche until knife inserted into center comes out clean, about 35 to 45 minutes
  18. Let quiche stand 5 minutes
  19. Cut into wedges
