3 Cheese Chicken Enchiladas

Ingredients

• Flour Tortillas
• Enchilada Sauce
• Cream Cheese
• Sour Cream
• Salt
• Ground Cumin
• Pepper
• Chicken
• Monterey Jack Cheese
• Cheddar Cheese

Instructions

1. Heat oven to 350 degrees
2. In a large bowl, mix together the cream cheese and sour cream until it is smooth
3. Stir in cumin, salt and pepper
4. Add the chicken, 1 cup monterey jack cheese and the cheddar cheese
5. Dip the tortillas in the enchilada sauce to lightly coat
6. Place some of the mixture in the center of the tortillas
7. Roll
8. Place the tortillas seam side down in a lightly greased 13×9 pan
9. Cover with the remaining sauce
10. Bake for 25 minutes
11. Sprinkle the remaining cheese and bake for 3 more minutes
