An easy and healthy vegetarian burrito filling that tastes delicious.
Ingredients
- Olive Oil
- Onion
- Garlic Clove
- Chili
- Cumin
- Red Bell Pepper
- Button Mushrooms
- Kidney Beans
- Refried Beans
- Diced Tomatoes
- Tortilla
Instructions
- Heat the oil in a large saucepan and saute onion, garlic, chilli and cumin until fragrant and soft
- Add bell pepper and mushrooms
- Saute until soft
- Add both types of beans and the tomatoes
- Bring to the boil then reduce heat to low and simmer for 15-20 minutes
- Serve with warm tortillas and other fillings at the table for people to wrap into burritos
