15 Bean Soup

Yummy 15 bean soup. I cook this a lot. I like to serve it with fried chicken and cornbread.

Ingredients

  • 15 Bean Soup Mix
  • Onion
  • Garlic Cloves
  • Whole Tomatoes
  • Celery Leaves
  • Ham Hocks
  • Dried Parsley
  • Dried Rosemary
  • Black Pepper
  • Salt
  • Olive Oil
  • Chicken Bouillon Cubes

Instructions

  1. Wash the beans
  2. Put in large pot and cover with water
  3. Bring to boil
  4. Stir and remove from heat
  5. Cover and let sit 1 hour
  6. After that hour, drain beans and set aside
  7. Add oil to pot
  8. Saut your ham hocks, onion, and celery until tender
  9. Next add garlic and saut 2 minutes more
  10. Add your beans and cover with water
  11. Add tomatoes with the juice, parsley, rosemary, black pepper, bouillon cubes, and about 1 teaspoon of salt to start with
  12. Mix well
  13. Bring to boil
  14. Stir, reduce heat cover and simmer for 2 to 21 / 2 hours or until all the sizes of the beans are tender
  15. Keep watching it and stirring it every once in a while
  16. You may need to add more water
  17. You want it to keep a consistency a little thicker than a soup
  18. Taste it after it cooks–you may need more salt or pepper
  19. During the last 15 minutes of cooking, add the flavor package that comes with the beans
  20. Serve by itself or over rice
