Goat Cheese And Spinach Turnovers

Ingredients

  • Olive Oil
  • Red Onion
  • Garlic Cloves
  • Fresh Spinach
  • Soft Fresh Goat Cheese
  • Pine Nuts
  • Parmesan Cheese
  • Dried Rosemary
  • Lemon Peel
  • Phyllo Pastry Sheets
  • Unsalted Butter

Instructions

  1. Heat oil in large skillet over medium heat
  2. Add onion and garlic and
  3. Saute 5 minutes
  4. Increase heat to high
  5. Add spinach and saute until
  6. Wilted, about 5 minutes
  7. Drain spinach mixture, press to release all the liquid
  8. Transfer to bowl, cool completely
  9. Add goat cheese, pine nuts, parmesan, rosemary and lemon peel
  10. Season to
  11. Taste with salt and pepper
  12. Place 1 phyllo sheet down
  13. Cut
  14. Lengthwise into 3 strips
  15. Brush with butter
  16. Place 1 rounded tbsp filling
  17. At 1 end of dough strip
  18. Starting at 1 corner, fold pastry over filling,
  19. Form a triangle
  20. Repeat, folding up length of pastry
  21. Brush
  22. With butter
  23. Repeat with remaining pastry, butter and filling
  24. Transfer
  25. To baking sheet
  26. Cover and chill
  27. Preheat oven to 375f bake
  28. Till golden, about 12 minutes
  29. Cool slightly and serve
