Fresh Apple Cake With Rum Sauce

Ingredients

  • Butter
  • Sugar
  • Eggs
  • All-purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Ground Nutmeg
  • Ground Cinnamon
  • Cooking Apples
  • Pecans
  • Half Cream
  • Rum Extract

Instructions

  1. Cake:
  2. Cream the butter
  3. Gradually add the sugar, beating well at medium speed of an electric mixer
  4. Add eggs, one at a time, beating well after each addition
  5. Combine flour and the next 5 ingredients
  6. Add to the creamed mixture, beating until blended
  7. Stir in the apple and pecans
  8. Pour batter into a greased and floured 13 x 9 x 2 inch baking pan
  9. Bake at 325 degrees for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean
  10. Let cool completely in the pan on a wire rack
  11. Serve with hot buttered rum sauce
  12. Hot buttered rum sauce:
  13. Combine the sugar, butter, and half and half in a saucepan
  14. Cook over low heat, stirring occasionally, until sugar dissolves
  15. Remove from heat, and stir in the rum extract
