Ingredients

  • Olive Oil
  • Dried Fennel
  • Thyme
  • Parsley
  • Lemon Juice
  • Ouzo
  • Firm White Fish
  • Cognac

Instructions

  1. Combine olive oil, fennel, thyme, parsley, wine and ouzo
  2. Made 2 slanting incisions on each side of fish
  3. Coat fish with marinade
  4. Broil fish over medium-high coals, using 10 minutes per inch as a time measurement, turning once
  5. Place on hot platter
  6. Heat cognac and flame, then pour over fish
  7. Serve with natural juices on platter
