Double Chocolate Coconut Cookies

Ingredients

  • Unsalted Butter
  • Granulated Sugar
  • Light Brown Sugar
  • Eggs
  • Vanilla Extract
  • All-purpose Flour
  • Dutch-processed Cocoa Powder
  • Baking Soda
  • Baking Powder
  • Coarse Salt
  • White Chocolate Chunks
  • Sweetened Flaked Coconut
  • Walnuts

Instructions

  1. Preheat oven to 350f
  2. Place butter and sugar in a bowl of an electric mixture fitted withthe paddle attachment
  3. Mix on medium speed until smooth, about 2 minutes
  4. Mix in eggs one at a time
  5. Stir in vanilla
  6. Sift flour, cocoa powder, baking soda, baking powder, and salt in to a bowl
  7. Mix into butter mixture on low speed until weel combined
  8. Stir in chocolate, coconut, and walnuts
  9. Using a 1-1 / 2 inch ice cream scoop, drop batter onto baking sheet lined with parchment paper, spacing 2 inches apart
  10. Flatten slightly
  11. Bake until set about 10-12 minutes
  12. Let cool on sheets on wire racks 2 minutes
  13. Transfer cookies on parchment paper to racks to cool completely
