This recipe is tried and true! I make this every year for my dad's birthday. He asked if i will make it for easter this year too. I love this, and every time i make it, i think about how much my dad enjoyes it. I hope you will enjoy it too.
Plan ahead – allow minimum of 6 hours to chill. Time does not include cooling.

Ingredients

  • Graham Cracker Crumbs
  • Sweetened Flaked Coconut
  • Butter
  • Sugar
  • Mandarin Orange Segments
  • Crushed Pineapple In Juice
  • Cream Cheese
  • Eggs
  • White Chocolate Chips
  • Fruit
  • Cornstarch
  • Oranges

Instructions

  1. Coconut crust:
  2. Heat oven to 350 degrees
  3. Stir together graham cracker crumbs, coconut flakes, melted butter, and sugar in a medium bowl
  4. Press mixture firmly onto bottom of 9-inch springform pan
  5. Bake 8 minutes
  6. Cool slightly
  7. Filling:
  8. Cut mandarin oranges into small pieces
  9. Drain oranges and pineapple, reserving juices
  10. Beat cream cheese in large bowl until fluffy
  11. Add sugar
  12. Beat well
  13. Add eggs
  14. Beat well
  15. Stir in white chips, oranges and pineapple
  16. Pour mixture over baked and slightly cooled crust
  17. Bake 60 to 65 minutes or until center is almost set
  18. Remove from oven to wire rack
  19. With knife, loosen cake from side of pan
  20. Cool completely
  21. Remove side of pan
  22. Cover
  23. Refrigerate until cold
  24. Prepare tropical fruit sauce
  25. Tropical fruit sauce:
  26. Combine reserved fruit juices, suagar and cornstarch in a medium saucepan
  27. Cook over medium heat, stirring constantly, until thickend
  28. Remove from heat
  29. Stir in orange or pineapple extract
  30. Cool to room temperature
  31. Cover
  32. Refrigerate leftover sauce
  33. To serve:
  34. Pour desired amount of fruit sauce over individual slices of cheesecake
  35. Garnish with toasted coconut if desired
  36. Refrigerate leftover cheese cake – it there is any!
