Creamed Cabbage Soup Lightened Up

I made wigal's creamed cabbage soup and then lightened it up a little! You might like to add a tablespoon of low fat cream cheese at the end, to give it a little extra richness. I hope you enjoy!

Ingredients

  • Vegetable Broth
  • Onion
  • Celery
  • Cabbage
  • Carrots
  • Garlic Cloves
  • Low-fat Margarine
  • Flour
  • 2% Low-fat Milk
  • Vegetarian Bacon
  • Dried Thyme
  • Smoked Paprika

Instructions

  1. In a large saucepan, combine broth and vegetables
  2. Cover and simmer until vegetables are tender, about 20 minutes
  3. In a small saucepan, melt butter
  4. Stir in flour
  5. Gradually whisk in milk
  6. Cook and stir until thickened
  7. Stir into vegetable mixture
  8. Add vegetarian bacon, pepper, and thyme
  9. Heat through
  10. If you wish, add the cream cheese now, stirring to mix thoroughly
  11. Salt and pepper to taste
  12. Sprinkle a little smoked paprika over the top to garnish
  13. Enjoy!
