I had five pieces of iqf tilapia defrosted tonight, but no inspiration on how to prepare them. I happened to look in the freezer and see a bag of tater tots. "finger foods sounds good" i thought. So i tweaked a recipe from a cooking light cookbook into this recipe. My kids loved it. They ate them with ketchup while i prefered tartar sauce. We all also had tater tots and applesauce.

Ingredients

  • Tilapia Fillets
  • Skim Milk
  • Fresh Breadcrumb
  • Cornmeal
  • Ground Pepper
  • Cooking Spray
  • Salt

Instructions

  1. Preheat the oven to 400 degrees
  2. Put the fresh bread crumbs on a cookie sheet and place them in the oven until they are toasted
  3. Take them out and set them aside to cool
  4. Turn the oven up to 425 degrees
  5. Cut the tilapia into slices about one inch thick
  6. Put the tilapia in a bowl and add the milk
  7. Stir well
  8. In a large ziploc type bag add the toasted bread crumbs, cornmeal, and pepper
  9. Using a slotted spoon, remove the fish from the milk and put the pieces into the bag
  10. Seal it and then shake it up so all the pieces are coated
  11. Spray a cookie sheet with cooking spray
  12. Place the nuggets on the baking sheet
  13. Sprinkle the tops with salt
  14. Bake until the fish flakes easily with a fork, 15-25 minutes
