Ingredients

  • Collard Greens
  • Mustard Greens
  • Turnip Greens
  • Onions
  • Turnips
  • Tasso
  • Sugar
  • Picante Sauce
  • Salt
  • Fresh Ground Pepper

Instructions

  1. Place all greens in sink or a large pot
  2. Fill to brim with lukewarm water
  3. Let greens stand 15 minutes
  4. Carefully remove greens from water without disturbing sandy-silt which has settled to the bottom
  5. Wash leaves under running water
  6. Tear leaves into small pieces, removing tough ribs
  7. Place torn greens, onions, turnips, and tasso or ham in a 10- to 12-quart soup pot
  8. Fill to top with water
  9. Add sugar, picante sauce, salt and pepper
  10. Bring to a boil over medium-high heat
  11. Boil 5 minutes
  12. Reduce heat
  13. Barely simmer, stirring occasionally, 3 hours
  14. Taste for seasoning
  15. Adjust if necessary
  16. Greens should have lots of liquid left
  17. Add more water if necessary
  18. Serve hot
